Abstract
The exopolysaccharide of Lactobacillus delbrückii subsp. bulgaricus rr. isolated from skimmed milk, is a heteropolymer of D-galactopyranosyl, D-glucopyranosyl, and L-rhamnopyranosyl residues in the molar ratio 5:1:1.
